With a very sharp knife, cut squash crosswise or lengthwise and clean out seeds with a spoon.
To make them sit nicely on a plate, cut a little piece off the bottom of each.
Melt about 2 tablespoons butter, and drizzle over both halves, followed by brown sugar, cinnamon, nutmeg and salt.
Microwave on high for 10 – 12 minutes, then let the squash sit for about 3 minutes before removing from microwave. Vegetables still cook during this sitting time.
Grab a spoon and dig in!
