chocolate rum balls

Super easy, super good, no-bake rum balls. These no-fuss chocolate balls are easy to make, keep well, and the texture and flavour improves with age. Ok, I’m talking about like a few days . . . not a year, besides they’ll be eaten in no time. Instead of coconut, these are great rolled in chocolate sprinkles, coloured sprinkles or finely chopped nuts. Did I say easy 🙂

No-Bake Chocolate Coconut Rum Balls

Course: Dessert
Servings: 30 balls

Ingredients

  • 2 ½ cups graham wafer crumbs
  • 1 cup sifted icing sugar
  • ¾ cup finely chopped nuts
  • ¼ cup cocoa powder
  • cup corn syrup
  • ¼ cup rum or 1 tablespoon rum extract

toppings for rolling in:

  • ½ cup coconut, chocolate sprinkles or finely chopped nuts

Instructions

  • Mix together the graham crumbs, icing sugar, cocoa powder and nuts in a large bowl. Stir to blend well. Add in the corn syrup and rum, mix well and roll into 1" balls, then roll the balls into the coconut until well covered.
    Wrap the container of balls tightly with a snug fitting lid or plastic wrap and let sit a few hours to let the flavours blend.

Variation: Instead of rum, substitute your favourite brandy
