There’s nothing like a bowl of comfort food! It’s kind of fun working with dough, I remember playing with ‘playdoh’ when I was a kid, and my little friends and I would make pretend food and we’d put it up to our mouths and pretend to eat it. Well I still love to play with dough, but now I actually get to eat the finished product.
Basic Pasta Dough:
3 eggs
3 tablespoons water
1 teaspoon olive oil
2 cups all-purpose flour
Mix the eggs, water and oil in a bowl. Add flour slowly while stirring with fork. When enough flour has been added to work by hand, remove from bowl and knead dough on counter until a smooth ball can be formed. Cover dough and let it rest for about 20 minutes.
Cheese filling:
1 cup Ricotta cheese
½ cup shredded mozzarella cheese
¼ cup Parmesan cheese
1 egg
1 tablespoon fresh chopped parsley or 1 cup freshly chopped spinach
Pinch of salt and pepper to taste
Combine all ingredients together.
Directions:
Roll out half of the dough as thin as possible. Drop a small spoonful of filling 2 inches apart onto the thin dough. Brush around filling with some water or egg wash to hold the top layer of dough to the bottom layer. Press the top layer of dough down around filling to remove air. Cut around filling with cookie cutter, pastry cutter or knife.
