Coconut-Macaroon-Bars

 

Chocolate, almonds and lots of coconut, this is an easy and delicious bar to make for any occasion. This bar freezes well too.


Bottom Layer:

4 squares unsweetened baking chocolate squares
¾ cup butter
2 cups granulated sugar
3 eggs
1 teaspoon vanilla
1 cup flour
1 cup chopped almonds

Bottom Layer Directions:

Melt chocolate and butter in a microwaveable bowl in the microwave at 15 second intervals, stirring between each interval until chocolate is smooth. Add sugar, eggs and vanilla, stir until blended. Next, stir in the flour and almonds. Press into the bottom of a 9×13 baking dish lined with parchment paper, set aside.

Top Layer:

1 package cream cheese, 250 g, room temperature
2/3 cup sugar
2 eggs
2 tablespoon flour
1 cup chopped almonds
2 cups coconut

Top Layer Directions:

Beat cream cheese, sugar, eggs and flour, stir in almonds and coconut. Spread over bottom layer.

Top with whole almonds as a decoration if desired.

Bake at 350°F for 35 – 40 minutes, cut into squares when cool.
