My mother would make this soup a lot when I was little, it was a family favourite. Any vegetable that you have on hand will do. I used precooked and frozen meatballs for this recipe.
Soo good and easy to make!

Makes 4 large servings

Ingredients:
2 tablespoons olive oil
2 medium onions, diced
2 cloves garlic
½ cup celery, chopped
½ cup carrots, diced
5 potatoes peeled and cubed
1 tablespoon paprika
2 tomatoes, diced
12 – 15 pre-cooked meatballs
½ teaspoon pepper
½ teaspoon salt
4 cups chicken, vegetable or beef broth (or enough to cover ingredients)

Directions:
In a large pot, sauté the onion, garlic, celery, carrots, potatoes, and paprika, in the olive oil. After about 10 minutes, add the rest of the ingredients, cover, and simmer for 45 minutes, or until vegetables are tender.
